This is a spicy, salty, tangy blue cheese from just outside Castlebellingham, Co.Louth. Made by Peter Thomas, this raw milk cheese is aged for up to 6 months. Peter has been making this cheese since the 90s, buying milk from a neighbouring farm in Mansfieldtown.
