Cais Dubh

Made with: Raw Cows Milk
Rennet: Animal
Cais Dubh, literally meaning 'black cheese', is made by Frank and Gudrun Shinnick in Fermoy, Cork. They have been making cheese since 1996. Cais Dubh is a wild cheese with quite a springy texture for a hard cheese. It has a sharp bite that gets you at the side of your mouth, but a cheese that keeps on giving after you finish eating.
