A washed-rind cheese made by Frank and Gudrun Shinnick in Fermoy, Cork. One of the few cheeses in the UK and Ireland to use natural starters. The cheese is aged for 6 weeks and has a bouncy, buttery texture with a flavour that feels like you can really taste the milk from the farm.
