A hard goats cheese made by mother and son, Silke and Tom Croppe, just outside Belturbet, Co. Cavan. 

Aged from between 8 weeks to 4 months, these little rounds naturally develop their rinds after being bathed in sea salt brine. Salty, crunchy but still smooth flavoured.
