A hard sheeps milk cheese from Elizabeth Bradley in Fenagh, Carlow. It has the sweetness and nuttiness found in a cheddar, but has a drier crumblier texture, much like that of a pack of salted almonds.
Elizabeth has been making cheese since 2005 but has been farming for most of her life. She keeps goats and sheep and makes cheese that reflect her farm.
