An 18 month Gouda style cheese made by the Willems family. They make their cheese near Macroom, Co. Cork.
Based on a classic gouda with rich caramel flavours, this is the cheese my knife gravitates towards the most. Over the 18 months, it has had time to develop those little salt crunch crystals that we crave so much in cheese. The routine of a triangle of Coolea and your black coffee every morning is in your near future!
