From Lost Valley Dairy and Creamery, this is their crumbly, younger, milled-curd style, like a Caerphilly/Lancashire. Sobhriste, meaning fragile or delicate, this is aged for roughly 6 weeks. It has a subtle, slightly lactic flavour, with a crumbly texture and biscuity rind.
