This is our cheese! We make Young Buck in Newtownards. It is a raw milk blue cheese, made to a recipe that started from a book called Practical Cheesemaking that was published in 1917.

It is aged for a minimum of 12 weeks. We make our cheese from milk by Smyth McCann’s herd of 150 Holstein Friesian cows.
