This is a 3 year aged cheddar made by Tom and Norma, who make Bó Rua Cheddar that we also sell. They use milk from their gentle Montbéliarde cows, known for their use in cheesemaking. They have beautiful rust coloured markings, hence the name Bó Rua, the Irish for Red Cow.
This cheese is similar to their younger cheddar, but with bold, toffee flavours and sweet notes. Worth a try!
