These little rounds of washed, buttery cheese are made by Quinlan Steele in Eyeries, down at the Beara Peninsula at the very tip of West Cork.  They taste smokey (kind of like smokey bacon crisps) and the longer you leave them, the squishier and more farmyard-y they're gonna get.
